At URSA, we craft exceptional coffee through small-batch roasting on our Probat P12 machine, capable of roasting up to 25 pounds at a time for precision and consistency in every batch. Our carefully developed medium roast profile brings out balanced flavors with rich notes and a smooth finish.

OUR STORY

Our journey began with Tracy Allen, CEO and founder of Brewed Behavior, who guided us in mastering the art of coffee roasting. With his unmatched expertise and dedication, he taught us to perfect our roast, setting a strong foundation for everything to come. Tracy’s passion for excellence inspired us to push our boundaries and craft coffee that reflects both quality and care.

Next, we ventured to Colombia to meet Luis Miguel Garcia of Equation Coffee, whose vision for sustainability aligned perfectly with ours. Luis introduced us to the finest coffee in the world, connecting us with farmers who embrace regenerative farming practices. These partnerships not only support the environment but also ensure that every cup of coffee we offer tells a story of collaboration and respect.

Finally, we visited Diego Huertas at Finca El Rincón in Santa Maria, Colombia, where the magic of coffee truly comes to life. Diego’s deep connection to the land and his dedication to the craft provided us with an unforgettable experience. From his vibrant fields to his innovative methods, Diego embodied the heart of what makes Colombian coffee so extraordinary, leaving us inspired to share this journey with others

Cris Dam

As the founder of URSA Coffee Roasters, Cris Dam is driven by a passion for exceptional coffee and community connection. Through direct partnerships with Colombian farms and a commitment to small-batch roasting, he ensures every cup reflects transparency, quality, and purpose—creating a meaningful space where coffee brings people together.

Cris cofounded Dam Stuhltrager in 1998 and was an early gallerist to propel Williamsburg Brooklyn into an international art mecca. Dam’s bright paintings and large persona made him a recognizable character synonymous with Brooklyn’s lively art scene.

Mark Munday

As Master Roaster at URSA Coffee Roasters, Mark is dedicated to achieving unmatched quality in every roast. With a sharp focus on precision and flavor, he carefully crafts each batch to highlight the rich, balanced profiles that define URSA’s coffee. His commitment to excellence ensures every cup is a true reflection of the art and science of great coffee.

Lauren Callahan

Lauren brings a unique mix of creativity and business savvy to URSA. With a background in Business Management, Entrepreneurship, and Studio Art, she’s an artist, seamstress, singer, and all-around creator. Her experience spans food packaging, project management, small business sales, and years behind the bar as a barista in cafés. At URSA, Lauren wears many hats—handling administration, event coordination, sales, and client relations—while helping shape the vibrant, community-driven spirit of the brand.
